Banana & Chocolate Cake

I discovered a note on the lounge the other morning when I was cleaning up requesting a plate to be sent to school for Grandparents day! It hadn’t actually been handed to me but there it was. I looked through the pantry for ingredients that I could whip up into something good enough for a Grandparents morning tea. Luckily we had some overripe bananas and ingredients for a cake, so I combined the two and came up with a Banana & Chocolate cake.

Happily this batter makes a lot of cake so there was enough for two cakes. One for school and one for us.

INGREDIENTS

  • 4 eggs
  • 1 3/4 cups brown sugar
  • 2 over ripe bananas
  • 2 1/4 cups self raising flour
  • 1 cup cold water (with half teaspoon bi-carb soda)
  • 185g butter (melted)
  • 4 tablespoons cocoa
  • 2 tablespoons hot water
  • splash vanilla essence

ICING

  • 2 cups icing mixture
  • 1 cup butter (melted)
  • 2 tablespoons cocoa
  • splash Milk

Method

Preheat Oven 150 Deg
Grease two round tins (cake will make more than enough for one cake so better to have two tins to make a layer cake)
Thermomix Instructions 
Melt butter on 90 deg speed 3 90secs
Put all the ingredients into the melted butter
Blend all ingredients together for 1min slowly increasing speed to 8
Pour into prepared tins
Bake for 45mins in pre-heated oven
Remove from oven to cool
When totally cool layer the cakes with icing in-between each layer
Using a regular mixer 
Melt butter
Put all ingredients into the same bowl
Mix well on high speed until all ingredients are mixed well and mixture is smooth
Pour into prepared tins
Bake for 45mins in pre-heated oven
Remove from oven to cool
When totally cool layer the cakes with icing in-between each layer
Icing
Mix everything together until smooth.
