I discovered a note on the lounge the other morning when I was cleaning up requesting a plate to be sent to school for Grandparents day! It hadn’t actually been handed to me but there it was. I looked through the pantry for ingredients that I could whip up into something good enough for a Grandparents morning tea. Luckily we had some overripe bananas and ingredients for a cake, so I combined the two and came up with a Banana & Chocolate cake.
Happily this batter makes a lot of cake so there was enough for two cakes. One for school and one for us.
INGREDIENTS
- 4 eggs
- 1 3/4 cups brown sugar
- 2 over ripe bananas
- 2 1/4 cups self raising flour
- 1 cup cold water (with half teaspoon bi-carb soda)
- 185g butter (melted)
- 4 tablespoons cocoa
- 2 tablespoons hot water
- splash vanilla essence
ICING
- 2 cups icing mixture
- 1 cup butter (melted)
- 2 tablespoons cocoa
- splash Milk
